Beauty Boosting Recipe: Nettle leaf pancakes with lingonberries

On a one very lovely summer afternoon at our grandmom´s, our beloved auntie Anne together with our co-founder Anu´s daughter Ellen, went out and about to pick up wild stinging nettle leafs and made pancakes of them!

These pancakes are not only heavenly delicious but have the amazing benefits for skin and hair:

Nettle leaf tightens and firms the skin, regulates sebum production, treats acne, promotes flawless skin, and so much more.

Top the pancakes with lingonberries/lingonberry jam to get the super power effect!

Arctic lingonberries contain high quantities of fruit acids that help with skin cell turnover and skin regeneration. Dull or grey skin may be caused by the slow process of skin cell turnover. Lingonberries speed up that process and help complexion look fresh and dewy!

 

Ingredients:

1 liter milk (of your choice)

5 eggs

7 dl wheat flour

1 tsp salt

1 tbls sugar

80 gr nettle leafs

 

Boil the nettle leafs for 2 minutes, drain well.

Mix all the ingredients together in a blender, blend until smooth.

Heat a large skilled. For each pancake, spoon 4 to 5 tablespoons of batter onto skillet (add a little butter on the skillet), using the back of the spoon to spread batter into a round. Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a  platter; cover loosely with aluminum foil to keep  them warm.

Continue with more oil and remaining batter. (You'll have approx 15 pancakes.)

Serve warm, with fresh lingonberries/lingonberry jam.
