Beauty Boosting recipe: Roasted Butternut Squash Soup
Butternut squash is naturally rich in fiber, vitamin A, magnesium, vitamin C, and potassium. Butternut squash can enhance the hair and skin because of its high vitamin A content. Vitamin A is needed for sebum production, which keeps skin moisturized.
Ingredients
1 medium butternut squash (halved vertically and seeds removed)
1 carrot
1 onion
2 garlic gloves
1 tablespoon olive oil
1 teaspoon maple syrup
1 tsp salt
4 dl vegetable broth or coconut milk
1/2 tsp nutmeg

Ingredients

Preheat the oven to 200’C
Drizzle each half of butternut squash and carrot slices with olive oil and sprinkle it with salt and pepper. Turn the squash face down and roast with carrot slices until completely cooked through, about 50 minutes.
Heat roughly chopped onion and garlic on a pan until soft.
Use a large spoon to scoop the butternut squash flesh into your blender (Discard the tough skin) and add the soft carrot slices and softened onions and garlic to the blender as well.
Add the maple syrup, nutmeg, salt and pepper and pour in 4dl vegetable broth/coconut milk.
Blend on soup preset.
Enjoy!
