A creamy, dairy free coconut ice cream recipe you can make at home, no ice cream maker required!
250 ml coconut cream
1 frozen banana
1/2 tsp vanilla extract
4 tbls Sea buckthorn jam
*Be sure to use full-fat canned coconut milk, not lite or coconutmilk beverage.
Blend all the ingredients together (except sea buckthorn jam) in a blender until smooth. Then pour the ice cream into a shallow pan and put it into your freezer. Every half an hour take the pan out of the freezer and use a fork to scrape and mix the ice cream. Do this at least 3-4 times. When the cream is not so liqudy anymore, add sea buckthorn jam stripes. And that's it!
